Rainbow Krispy Treats

These little treats are ideal for anytime. Easy to make, delicious to eat and with sprinkles, these bars only take 15 minutes or less of your time to make. Also great to make with aspiring little chefs in your house!

I have never been a big fan of breakfast cereals. Cornflakes, shredded wheat and even coco pops (gasp!) have never been my top breakfast items. I am more of a hearty and thick bowl of porridge girl, must be because I'm Scottish! I love a big bowl of crunchy and nutty granola or a serving of my Nutella and Strawberry French Toast would please me very much. The only time "real" cereal appeals to me is when it is  covered in chocolate, in a biscuit or the superstar ingredient in a bake, like this treats!



I think spring might of sprung around there. Finally, after a winter of non-stop rain for 4 whole months, the sun has arrived. The plants are starting to bloom and the daffodils are covering the land with bright yellow petals. I received a raspberry and bramble bush and they are now basking in the spring sunlight, Hopefully, we will have plenty of berries for the summer!

So, these bars are sweet, sticky and full of sprinkles., Very moreish and addictive,, you won't be able to stop at one. Maybe by the second and third you might by able to lay of them, a bit!




Easy peasy, you could make these bars in a matter of 

minutes. I am sure you have a box of puffed rice cereal, some marshmallows and a little bit of butter, don't you? These three ingredients are the bases of most Rice Krispy treats. Some recipes may add a little bit of golden syrup or corn syrup and a bit more butter but I find the marshmallows sweeten the bars perfectly and the bars don't need the extra dairy. Everyone has their own preferences! 
If you just want to make a plain tray of treats, leave out the sprinkles and just use white marshmallows. I couldn't find any white marshmallows so I just used a mixture of pink and white.

Rainbow Krispy Treats

Makes 16
Ingredients
  • 90g Puffed rice cereal 
  • 140g Mini marshmallows 
  • 1 tsp.  Butter 
  • 50g Sprinkles or sugar strands

Method
  1. Make some room in the fridge and grease and line a 23cm square tin with 2 layers of clingfilm.
  2. Put the rice into a large bowl. Add the marshmallows and butter to a small pan and heat on medium heat until melted. 
  3. Add the mallow mix to the cereal and stir really well. Sprinkle in the sprinkles and fold in. Mix until just mixed as if you mix too much, the sprinkles will bleed their colour.
  4. Push into the tin and make sure the treats are level. Chill for 45 - 60 minutes before slicing into 16 bars.

These bars should be stored in the fridge in an air-tight container for up to 5 days.
