Apple and Walnut Bread

Apple, walnuts and cinnamon gives this bread such a warm and comforting taste. Light and flavourful, this easy bake will never let you down.

Heaven on a darn plate!

Moist, sweet and stuffed with apples, this bread is uber easy to make. No mixer required and it can be done and dusted in under an hour. 

What's even better is that once you get a whiff of the baking bread, you will probably start to imagine that you are in your favourite coffee shop.



I now use the same recipe for all of my sweet breads; all adapted from my quick and easy banana bread. Instead of using bananas in the bread, I used natural (plain) yogurt. 

Yogurt, sour cream and buttermilk are all key ingredients if you plan to make a seriously moist and rich bake. Sour cream can also be substituted with thick Greek yogurt as both have the same dairy richness. 

Also, as well as using yogurt, I threw in an extra egg for two reasons. One to give the bread more structure to be able to hold up the apples pieces and walnuts and two for extra richness yet lightness as well.

This bread is truly packed with apples, every bite is filled with tender apple pieces. I recommend you use a cross between a cooking apple and an eating apple, like a Granny Smith or Cox's. If you use an eating apple, I find the apple "dissolves" into the batter while the bread bakes, leaving behind a grainy texture in place. 

The walnuts provide a great texture contrast against the soft apple and spongy bread. It is like finding a little nugget of gold nestled in the cinnamon spiced bread. I love the woody and earthy taste that walnuts have but you could easily swap the walnuts for a nut of your choice. 
(May I suggest pecans?)  



Each bite is full with cinnamon, apple and walnuts. So comforting yet so easy to make!









Apple and Walnut Bread

Makes 1 x 900g loaf/ Serves 10
Ingredients

  • 60ml Oil, like sunflower
  • 120g Soft light brown sugar
  • 2 Eggs
  • 100g Plain yogurt
  • 175g Plain flour
  • 1 1/2 tsp. Baking powder
  • 1/2 tsp. Baking soda
  • 1/4 tsp. Salt
  • 1 tsp. Cinnamon
  • 1/2 tsp. Nutmeg 
  • 200g Granny Smith apple, peeled and diced
  • 80g Walnut halves, roughly chopped

Method
  1. Oven 170ºc/ 160ºc fan/ gas mark 2. Grease and flour a 900g loaf tin.
  2. Whisk the oil, sugar, eggs and yogurt together by hand using a whisk until uniform in texture and colour.
  3. Sieve in the flour, baking powder, baking soda, salt, cinnamon and spice and fold in with a spatula, being careful not to over-mix.
  4. Add in the diced apple and nuts and fold in again. Transfer the batter into the prepared in and level using a spoon.
  5. Bake for 55 minutes until golden brown, risen and when a skewer is inserted, it comes out clean. At the 30 minute mark, cover the bread with foil. 
  6. Leave the bread to cool in the tin for 20 minutes before removing and placing on to a wire rack to cool completely.

The bread will say fresh for up to 5 days if stored in an air-tight container at room temperature.
