Brown Butter Peach Muffins

Summer in a mouthful; sweet and moist peaches are covered in a brown butter muffin batter and baked until golden and fluffy. Light and flavourful, this muffins really hit the spot.



Have I got to tell you about these muffins or what!
Full of juicy, perfectly ripe peaches which turn tender and so moreish. 
You will fall in love with these at first bite!


I just love muffins, especially if they are from a proper deli or coffee shop. My sister and I used to, after school, run to the bakery which was right next to our house to buy a sweet treat to last us through the weekend. My sister would either buy an iced finger or carrot cake slice were as I would always pick an extremely chocolate-y muffin to satisfy my chocolate cravings. We would then run home and I would put the muffin into the microwave to melt the chocolate and to make it even more moist. The chocolate would completely intoxicate you, even if you did drink half a pint of milk with it! Now, my muffin flavour choice has change to something a little more "mellow", shall we say, like blueberry or banana but I still have a little place in my heart for a chocolate muffin ;D


Sadly, these days have past now but the happy {and tasty} memories will definitely stay with me!
I really need to make a chocolate muffin now... But first, let my tell you about these beauties.

Making these muffins could hardly be simpler, you could probably do it with your eyes closed. In this recipe, I used 2 peaches for extra flavour and moisture. I am addicted to them. 1 of the peaches is peeled and diced; this peach goes in a layer in the middle of the muffins. The second peach in sliced, with the skin on for extra colour, and placed on top of the muffin. This guarantees a moist and flavour-packed bite of heaven!



Instead of using oil,  I used melted butter to add an extra rich taste and texture. Melted butter is a bit boring so I decided to turn up the volume.  I browned the butter to add a light nutty undertone to the muffin mixture.  Browning butter is really easy to do and it makes any dish sound more sophisticated.  Just melt the butter and turn up the heat and boil.  The milk solids will evaporate leaving behind a dark liquid gold river of butter,  perfect for this recipe.  Such an easy step can really develop a recipe into something a bit more special. 

To emphasize the "brown" flavour even more,  I used light brown sugar.  I adore using brown sugars in my bakes,  they add moisture, flavour and colour; everything important in a bake!


I have to say, these are the best muffins I have ever made! Easy to make and easier to eat, why not make a batch of my peach muffins?!







Brown Butter Peach Muffins

Makes 12 
Ingredients
  • 2 Ripe peaches, 1 skinned and diced, 1 sliced with skin
  • 250g Self-raising flour
  • 100g Light brown sugar
  • 1 1/2 tsp. Baking powder
  • 1 tsp. Baking soda
  • 60g Butter, melted until a light brown colour 
  • 2 Eggs
  • 125g Plain yogurt
  • 125ml Milk 
  • Demerara sugar, for sprinkling 
Method
  1. Preheat the oven to 200ºc/ 190ºc fan/ gas mark 6 and grease a 12 hole muffin tin.
  2. Sieve the flour, sugar, baking powder and soda into a large bowl and stir to combined.
  3. In a separate bowl, whisk together all of the remaining ingredients apart from the peaches and demerara sugar to a smooth consistency.
  4. Make a well in the middle of the dry ingredients and pour the wet in. Using a spoon, mix briefly until no lumps remain, don't beat the mix.
  5. Using an ice-cream scoop, scoop half a scoop of the batter into the tin. On top, divide the diced peach evenly and sprinkle with the sugar. Top that with half a scoop of batter, the sliced peach and sugar
  6. Bake for 10 minutes and then turn down the temperature to 170ºc/ 160ºc fan/ gas mark 3 for another 10 - 15 minutes until a skewer inserted comes out clean and the muffins are golden brown.
  7. Cool in the tin for 10 minutes before removing.

Enjoy!

The muffins should be stored in an air-tight container for up to 3 days.
