Chocolate Courgette Brownies

The best fudge brownies ever! Rich dark chocolate brownies meet fresh courgette for an amazing combination. Moist, luscious and decadence, you won't be able to stop after a bite!



Have you got a glut of courgettes in your garden yet? If so, this recipe will be great for you. Look how fudgy and moist those brownies are!




These brownies are probably the best I have ever tasted, even though they have courgette in them. That's right, courgette! Courgette makes the brownies so moist and soft, perfect to fix your chocolate cravings. Even though you can taste the courgette the tiniest bit, I promise you will love these.

Yes, you can see specks of green but, that's a part of the charm!


To make your brownies, you will need a touch of dark chocolate to make a big chocolate flavour. I used a organic 70% dark chocolate to add the intense chocolateness which brownies are famous for. As well as the chocolate, I added cocoa powder to add even more flavour. Also, using cocoa powder and flour instead of just flour gives the brownies a lower gluten content, making them softer and more decadent. 

Melt the chocolate with the butter and oil and you are on the way to brownie victory! 

Oil? Oil in a brownie mixture? 
Ok, ok, I know traditional brownies made from scratch usually contain just butter, and lots of it, but I feel that the oil adds a different "moistness" to the brownies. 
You can of course use all butter in the recipe but don't use 100% oil; the butter adds flavour!


These brownies are amazing, one bite and you'll be hooked! As you can probably see, I like my brownies on the squidgy "underbaked" side. If you prefer a more cakey "well done" brownie, you just add more flour. I only used 30g of flour in the entire recipe, which isn't a lot at all. I would recommend to double or even triple the amount of flour to suit your brownie preference.

Chocolate Courgette Brownies

Ingredients

  • 40g dark chocolate, I used 70% 
  • 40g butter, unsalted
  • 40ml oil, like sunflower or rapeseed
  • 65g soft light brown sugar
  • 65g caster sugar
  • 2 eggs, at room temperature
  • 30g plain flour
  • 30g cocoa powder
  • 3 tbsp. boiling water
  • 1 tsp. vanilla extract 
  • 150g courgette, topped, tailed and grated

Method
  • Preheat the oven to 180ºc/ 170ºc fan/ gas mark 4 and grease and line a 20cm square cake tin.
  • Put the chocolate, butter and the oil into a heatproof bowl and set over a pan of simmering water, don't let the bowl touch the water. Melt the mixture on a low heat, stirring occasionally until smooth, shiny and melted. Take the bowl off the heat and set aside. 
  • Put the sugars and eggs into a large bowl and whisk for 3-5 minutes, using a freestanding mixer or hand held mixer until pale and moussy. 
  • Pour the cooler chocolate mix into the egg mixture and briefly fold in using a spatula. Sieve in the flour and cocoa powder and fold in until nearly combined. 
  • Add the water, vanilla and grated courgette and stir in well. Spoon the batter into the prepared tin and level the top. 
  • Bake for 18-25 minutes until a skewer inserted comes out with some damp crumbs attached. Leave the brownies to cool in the tin completely before slicing into pieces. 

Enjoy! 



Store the brownies in an air-tight container for up to 3 days at room temperature.
