Emmm.... Yeah, I love a good pancake; fluffy vanilly goodness covered in sweet and sticky maple, golden syrup or honey and topped with butter (well, soy spread for me!), this is my idea of a decadent breakfast heaven!
Pancakes should be extremely light, fluffy and tender and loaded with flavour. This simple vanilla 'cakes fit the bill perfectly with their beautiful texture, appearance and most of all, their taste.
I know some people are very against sugar in the mornings, like sugary breakfast cereal and sweet pastries, but come on, this sugar is in pancake form so how can you say no?!? Plus, the pancakes don't contain much sugar, but with little sugar in the batter, you really can't resist absolutely drenching the cakes in sweet syrup!
Just a warning here; these cake are so addictive that it is unreal! Sadly, they aren't exactly health food either even though they don't contain butter or chocolate, they are just heavy on the carbs.
Actually... If I think about it, they kinda are healthy! Healthy in a small quantity. (Hehe, sorry guys, this recipe makes 12 big pancakes, perfect for 4 very hungry people!)
Pancakes are so lovely to rustle up on a weekend morning and then enjoyed with some fresh orange juice, coffee and a good magazine around the kitchen table with the family. Easy to make and ready in under 10 minutes, that is my idea of the perfect cozy winter breakfast! Or, you could even half the recipe and make them as a very tasty and rewarding afternoon snack, or, who cares?!? Go mad and you could even have them for dessert!
Why not make a pancake bar? Make up the plain batter and when the cakes are cooking, top them with fresh berries, caramel sauce or chocolate chips. Personally, I just love these pancakes in their simplest form.
These are so much better than shop-bought pancakes which are filled with ingredients such as "diphosphates", "dehydrated egg powder" and "pyridoxine hydrochloride", yum....
None of that gunk is in these pure pancakes, just good ingredients such as organic free-range eggs and golden caster sugar.
You could literally make and devour these pancakes in a matter of minutes; the batter takes no time at all to make and cooking time is next to nothing. Whisk together the dry and the wet ingredients in a large bowl and fry on a non-stick frying pan until bubbling and golden brown - that is my idea of easy!
My only key piece of advice is to fry these cakes on a non-stick frying pan with no oil or butter or even cooking spray. I have tried frying these in a touch of butter and I didn't really like the way they turned out - all greasy and they didn't rise as much. A non-stick pan is such a good investment to have in the kitchen, it will definitely make your cooking and baking life much easier!
Top these pancake with anything you like, I love these with lashing of pure maple syrup or even honey if I am feeling quite "fancy". Go mad and go heavy on the nutella but I think these would be absolutely amazing with some biscoff spread!
Vanilla Buttermilk Pancakes

Makes 12, Serves 4-6
- 225g plain flour
- 4 tsp. baking powder
- 1/2 tsp. baking soda
- 50g caster sugar
- 2 egg
- 200ml buttermilk
- 1/2 vanilla pod, seed only or 1/2 tbsp. vanilla extract
- 2 tbsp. oil, I used rapeseed oil
- Put the flour, baking powder, baking soda and caster sugar into a bowl and mix together. In a separate jug, whisk together the eggs, buttermilk , vanilla and oil.
- Pour the wet ingredients into the dry and mix until nearly smooth with a few lumps. Heat a non stick frying pan on medium heat or use a griddle.
- Using a large tablespoon, put 2 tablespoons of batter on to the pan and cook until bubbles form on top. Flip and cook for another minute or so until golden and fluffy.
- Continue to use up the rest of the batter. Serve warm with butter, jam, maple syrup, golden syrup or nutella
